  • 1 cup mini marshmallows (50 g)
  • Pinch of salt (optional)

Instructions

  1. Warm the milk and cream: In a small saucepan, combine 2 cups whole milk with ½ cup heavy cream. Heat over medium-low heat, stirring occasionally, until hot but not boiling (about 5-7 minutes).
  2. Melt the chocolate: Place 4 oz chopped dark chocolate in a heatproof bowl. Pour a small amount of the warm milk mixture over the chocolate and let sit for a minute to soften. Whisk gently until smooth.
  3. Combine the chocolate and milk: Slowly whisk the melted chocolate back into the saucepan with the milk and cream. Stir gently over low heat until fully combined and silky (about 2-3 minutes). Avoid boiling.
  4. Add sweetness and flavor: Stir in 2 tablespoons granulated sugar, 1 teaspoon vanilla extract, and a pinch of salt if using. Taste and adjust sweetness as needed.
  5. Remove from heat and add Baileys: Take the saucepan off the stove and stir in ¼ cup Baileys Irish Cream. Mix well and pour into mugs.
  6. Toast the marshmallows: Using a long-handled spoon or skewer, carefully toast mini marshmallows over a gas burner flame or kitchen torch until golden brown and slightly crispy. Alternatively, broil them on a lined baking sheet for 1-2 minutes, watching closely.
  7. Top and serve: Pile toasted marshmallows generously on top of each mug. Optionally, dust with cocoa powder or sprinkle cinnamon.

Notes

Use quality dark chocolate with 60-70% cocoa for best flavor. Heat milk and cream gently to avoid scorching. Toast marshmallows carefully to prevent burning.
