  • 1/4 cup Baileys Irish Cream (60 ml)
  • 1 cup cold heavy cream (240 ml)
  • 2 tbsp granulated sugar (25 g)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Melt the chocolate: Place chopped bittersweet chocolate in a heatproof bowl over simmering water (double boiler). Stir gently until smooth, about 5 minutes. Alternatively, microwave the chocolate in 20-second bursts, stirring between until melted. Remove from heat and let cool slightly.
  2. Whip the cream: Using an electric mixer or hand whisk, beat 1 cup (240 ml) of cold heavy cream with 2 tbsp (25 g) sugar, 1 tsp vanilla extract, and a pinch of salt until soft peaks form, about 3-5 minutes. Be careful not to overwhip.
  3. Combine Baileys and chocolate: Stir 1/4 cup (60 ml) Baileys Irish Cream into the melted chocolate. Mix gently until fully incorporated and smooth but not hot.
  4. Fold in whipped cream: Add about one-third of the whipped cream to the chocolate mixture. Fold gently using a spatula to lighten the chocolate. Then fold in the remaining whipped cream carefully until no streaks remain.
  5. Portion into cups: Spoon the mousse into serving cups or ramekins. Smooth the tops or leave rustic.
  6. Chill: Refrigerate the mousse cups for at least 2 hours, preferably longer. Alternatively, freeze for 30-45 minutes but avoid freezing solid.
  7. Serve: Garnish with whipped cream, chocolate shavings, or cocoa powder if desired.

Notes

Let melted chocolate cool to warm before folding in whipped cream to maintain airy texture. Whip cream to soft peaks to avoid grainy texture. Folding gently is key to keeping mousse light. Mousse benefits from chilling at least 2 hours or overnight. Can substitute Baileys with cream and vanilla for non-alcoholic version. Freezing changes texture; thaw in fridge and stir gently before serving.
