Instructions

  1. Bring a large pot of salted water to a boil. Add gluten-free elbow macaroni and cook according to package instructions until just al dente (about 7-8 minutes). Drain and set aside.
  2. In a medium saucepan, melt 3 tablespoons of unsalted butter over medium heat. Whisk in gluten-free all-purpose flour and stir continuously for about 2 minutes until bubbly and nutty-smelling.
  3. Gradually pour in warmed whole milk while whisking constantly to avoid lumps. Continue whisking until sauce thickens, about 5-7 minutes.
  4. Lower heat to medium-low. Add shredded sharp cheddar and grated Parmesan a handful at a time, stirring until melted and combined. Season with garlic powder, onion powder, salt, pepper, and optional smoked paprika. Adjust seasoning to taste.
