  • 1 pound (450g) boneless, skinless chicken breasts
  • 2 tablespoons olive oil or avocado oil
  • 3 garlic cloves, minced
  • 4 oz (115g) cream cheese, softened
  • 1 cup (240ml) heavy cream
  • 3/4 cup (75g) grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Pinch of nutmeg
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Pat chicken breasts dry with paper towels. Season both sides with salt, pepper, and Italian seasoning.
  2. Heat olive oil over medium-high heat in a skillet. Add chicken breasts and cook 4-5 minutes per side until golden brown and cooked through (165°F/74°C). Remove and set aside to rest.
  3. Lower heat to medium and add minced garlic to the same pan. Sauté for about 30 seconds until fragrant without browning.
  4. Add softened cream cheese to the pan. Whisk or stir continuously until melted and blended with the garlic oil, about 2-3 minutes.
  5. Slowly add heavy cream while stirring. Simmer gently for 3-4 minutes until sauce thickens slightly.
  6. Gradually stir in grated Parmesan cheese until melted and smooth.
  7. Season sauce with nutmeg, salt, and black pepper to taste. Adjust seasoning as needed.
  8. Slice rested chicken into strips or bite-sized pieces. Return to pan and coat with sauce. Warm together for about 2 minutes.
  9. Garnish with chopped fresh parsley and serve immediately while warm and creamy.

Notes

If sauce gets too thick, stir in a splash of chicken broth or water to loosen. Whisk cream cheese well before adding cream for a smoother sauce. Let chicken rest after cooking to keep it juicy. Avoid boiling sauce to prevent curdling. Freshly grated Parmesan melts better than pre-grated.
