  • 1.5 pounds boneless, skinless chicken breasts, pounded to even thickness
  • 2 tablespoons extra virgin olive oil
  • 3 garlic cloves, minced
  • 1/3 cup sun-dried tomatoes, chopped (preferably packed in oil)
  • 3 cups fresh baby spinach
  • 1 cup heavy cream (240 ml)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chicken broth (120 ml), low-sodium recommended
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme mix)
  • Salt and pepper to taste
  • Optional: red pepper flakes for heat
  • Optional: fresh basil for garnish

Instructions

  1. Pat the chicken breasts dry with paper towels. Place between two sheets of plastic wrap and gently pound to about 1/2 inch thickness. Season both sides with salt, pepper, and dried Italian herbs. (5 minutes)
  2. Heat olive oil in a large skillet over medium-high heat until shimmering but not smoking. (2 minutes)
  3. Sear the chicken breasts in the pan for 4-5 minutes on each side until golden brown and cooked through (internal temperature 165°F). Transfer to a plate and set aside. (10 minutes)
  4. Lower heat to medium. Add minced garlic and sauté for about 30 seconds until fragrant. Add chopped sun-dried tomatoes and stir for another minute. (2 minutes)
  5. Pour in chicken broth, scraping the bottom of the pan to lift browned bits. Simmer for 2 minutes to reduce slightly. Add heavy cream and Parmesan cheese, stirring until sauce thickens and becomes creamy. (5 minutes)
  6. Add fresh spinach and stir until wilted, about 1-2 minutes. (2 minutes)
  7. Return chicken to the pan, nestle into the sauce, spoon sauce over the top, cover, and simmer on low heat for 3-5 minutes to marry flavors. (5 minutes)
  8. Taste and adjust seasoning with salt, pepper, or red pepper flakes if desired. Garnish with fresh basil if using. (1 minute)

Notes

Pat chicken dry before seasoning to get a good sear and avoid steaming. Do not overcrowd the pan to ensure proper browning. Keep heat moderate when making the sauce to prevent cream from curdling. Add spinach at the end to keep it bright and tender. If sauce thickens too much, add a splash of broth to loosen it.
