  • 3 pounds russet potatoes (medium-sized, scrubbed clean)
  • 2 cups smoked cheddar cheese, shredded (about 200 g)
  • 45 scallion stalks, thinly sliced (green and white parts)
  • 4 tablespoons unsalted butter, softened (60 g)
  • 1/2 cup sour cream (120 ml)
  • 1/2 cup whole milk (120 ml) – can substitute with 2% or almond milk
  • 1 teaspoon garlic powder
  • Salt to taste (start with 1 teaspoon)
  • Freshly ground black pepper to taste (about 1/2 teaspoon)
  • Optional: 1/4 cup panko breadcrumbs for topping

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch (23×33 cm) casserole dish with butter or non-stick spray.
  2. Place the cleaned russet potatoes in a large pot and cover with cold, salted water. Bring to a boil over high heat, then reduce to medium-low and simmer until tender, about 20-25 minutes. Test doneness by piercing with a fork.
  3. Drain the potatoes and let them cool for about 5 minutes until safe to handle.
  4. Transfer potatoes to a large mixing bowl. Add softened butter, sour cream, and milk. Mash with a potato masher or hand mixer until creamy but still a bit fluffy. Avoid overmixing.
  5. Stir in garlic powder, salt, and freshly ground black pepper. Mix well.
  6. Fold in 1 1/2 cups (150 g) of shredded smoked cheddar and all the sliced scallions. Reserve the remaining 1/2 cup (50 g) cheddar for topping.
  7. Spoon the potato mixture into the prepared casserole dish, spreading evenly.
  8. Sprinkle the remaining smoked cheddar evenly over the top. Optionally, add a light sprinkle of panko breadcrumbs for a crisp crust.
  9. Bake for 25-30 minutes until the cheese is melted, bubbly, and golden on top.
  10. Remove from oven and let sit for 5 minutes before serving.

Notes

Do not overmix the potatoes to avoid a gluey texture. Use good-quality smoked cheddar for best flavor. If the top browns too fast, tent with foil halfway through baking. For a crispier topping, add panko breadcrumbs. The casserole can be prepared ahead and refrigerated before baking. Reheat leftovers covered in a 350°F oven for 15-20 minutes.
