Instructions

  1. Make the churro dough: In a medium saucepan, combine 1 cup water, 2 tablespoons unsalted butter, 2 tablespoons granulated sugar, and ½ teaspoon salt. Bring to a boil over medium-high heat, stirring occasionally. Once boiling, remove from heat immediately.
  2. Add the flour: Quickly stir in 1 cup all-purpose flour until the mixture forms a ball and pulls away from the sides of the pan. Let it cool for about 5 minutes.
  3. Incorporate eggs and vanilla: Transfer the dough to a bowl. Add 2 large eggs, one at a time, stirring vigorously after each addition until fully combined. Stir in 1 teaspoon vanilla extract and ½ teaspoon ground cinnamon. If dough is too stiff, add a teaspoon of water.
  4. Prepare the coating: In a shallow bowl, combine ½ cup granulated sugar with 1 tablespoon ground cinnamon. Set aside.
  5. Preheat the air fryer to 375°F (190°C) and spray the basket lightly with cooking spray.
  6. Pipe the churros: Fill a piping bag fitted with a large star tip with the dough. Pipe 4-inch strips onto a parchment-lined tray or plate.
  7. Air fry the churros: Place churros in the air fryer basket in a single layer. Air fry for 10-12 minutes, flipping halfway through, until golden and crispy.
  8. Coat with cinnamon sugar: Toss churros gently in the cinnamon sugar mixture to coat evenly.
  9. Make the chocolate dip: Heat ½ cup heavy cream in a small saucepan over low heat until steaming. Pour over chopped dark chocolate and let sit for a minute. Stir until smooth, then add 1 tablespoon butter, 1 teaspoon vanilla extract, and a pinch of salt. Stir until velvety and glossy.
