  • Egg roll wrappers (store-bought thin wrappers)
  • 1 lb ground pork or chicken (lean)
  • 2 cups finely shredded green cabbage
  • 1 cup grated carrots
  • 4 green onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 2 tablespoons soy sauce (low sodium preferred)
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil (for cooking filling)
  • Vegetable oil for brushing egg rolls
  • Salt and pepper to taste
  • Optional: pinch of red pepper flakes
  • Optional: splash of rice vinegar

Instructions

  1. Prepare the Filling (10-12 minutes): Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium-high heat. Add minced garlic and ginger; sauté for about 30 seconds until fragrant.
  2. Add ground pork or chicken. Cook until browned and no longer pink, breaking it apart with a spatula (about 5-7 minutes).
  3. Stir in shredded cabbage, grated carrots, and sliced green onions. Cook for another 3-4 minutes until veggies soften but still retain a bit of crunch.
  4. Season with 2 tablespoons soy sauce, 1 teaspoon sesame oil, salt, and pepper. Remove from heat and let cool slightly to avoid soggy wrappers.
  5. Wrap the Egg Rolls (10-15 minutes): Lay one egg roll wrapper on a flat surface, corner pointed toward you (diamond shape). Spoon about 2 tablespoons of the filling near the bottom corner.
  6. Fold the bottom corner up over the filling, then fold in left and right corners snugly. Roll tightly toward the top corner, sealing the edge with a dab of water to keep it closed.
  7. Brush each egg roll lightly with vegetable oil to promote crispness during air frying.
  8. Air Fry (12-15 minutes): Preheat air fryer to 375°F (190°C). Arrange egg rolls in a single layer in the basket, making sure they don’t touch.
  9. Cook for 6-8 minutes, then flip and cook another 6-7 minutes until golden brown and crispy.
  10. Serve warm. Let cool for a couple of minutes before serving to avoid burns.

Notes

If the filling is too wet, drain excess liquid before wrapping to avoid soggy egg rolls. Do not overcrowd the air fryer basket to maintain crispiness. Flip egg rolls halfway through cooking for even browning. Filling can be prepared up to 24 hours in advance and refrigerated. For baking alternative, cook at 400°F (200°C) for 20-25 minutes, flipping halfway.
