  • 2 tablespoons fresh herbs (rosemary, thyme, oregano), finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs, beaten, room temperature
  • 2 tablespoons olive oil or avocado oil (for frying or baking)
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels and cut into approximately 1.5-inch (4 cm) nugget-sized chunks.
  2. In a shallow bowl, combine gluten-free panko, almond flour, chopped herbs, garlic powder, onion powder, salt, pepper, and lemon zest if using. Mix well.
  3. In another bowl, whisk the eggs until uniform.
  4. Dip each chicken piece into the egg wash, letting excess drip off, then dredge thoroughly in the herb breadcrumb mixture, pressing gently to help it stick. Place coated nuggets on a plate.
  5. For frying: Heat oil in a large skillet over medium heat. Fry nuggets for 3-4 minutes per side until golden and cooked through (internal temperature 165°F / 74°C). Drain on paper towels.
  6. For baking: Preheat oven to 425°F (220°C). Place nuggets on a wire rack over a baking sheet, lightly spray with oil. Bake for 15-18 minutes, flipping halfway, until golden and cooked through.
  7. Let nuggets rest for 2-3 minutes before serving.
