Decadent Chocolate Earthquake Cake with Easy Coconut Cream Cheese Filling

  • 1 ¾ cups (220g) all-purpose flour, sifted
  • 2 cups (400g) granulated sugar
  • ¾ cup (75g) unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs, room temperature
  • 1 cup (240ml) buttermilk
  • ½ cup (120ml) vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup (240ml) boiling water
  • 8 oz (225g) cream cheese, softened
  • ¾ cup (90g) powdered sugar
  • 1 cup (80g) unsweetened shredded coconut
  • ¼ cup (60ml) full-fat coconut milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan and line with parchment paper.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk to combine.
  3. In a separate bowl, beat eggs, buttermilk, vegetable oil, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and gently fold until just combined; lumps are okay.
  5. Stir in boiling water carefully; batter will be thin.
  6. Using an electric mixer, beat cream cheese and powdered sugar until smooth. Add shredded coconut, coconut milk, and vanilla extract; mix until creamy.
  7. Pour half of the chocolate batter into the prepared pan and spread evenly.
  8. Dollop the coconut cream cheese filling over the batter and gently spread, leaving some swirls.
  9. Pour remaining chocolate batter over the filling and smooth the top.
  10. Bake for 40-45 minutes or until a toothpick inserted near the center comes out with a few moist crumbs.
  11. Cool cake in the pan on a wire rack for at least 1 hour before slicing.
  12. Serve at room temperature, optionally with whipped cream or vanilla ice cream.

Notes

Sift cocoa powder and flour to avoid lumps. Use boiling water to intensify chocolate flavor and keep cake moist. Do not overmix batter to maintain a tender crumb. Let cake cool completely to allow filling to set. Grease and line pan with parchment for easy removal. Opening oven door during baking can cause cake to sink.
