  • 1 medium onion, chopped
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 can (15 oz / 425 g) tomato sauce or diced tomatoes
  • 1/2 cup (120 ml) low-sodium chicken broth
  • 1 teaspoon dried Italian seasoning (oregano, basil, thyme)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch or arrowroot powder (optional, for thickening)
  • Optional add-ins: sliced mushrooms, olives, splash of balsamic vinegar

Instructions

  1. Chop 1 medium onion and 1 bell pepper into thin slices. Mince 3 cloves of garlic. If using mushrooms or olives, slice those now.
  2. In a mixing bowl, add 4 boneless, skinless chicken thighs (about 2 pounds / 900 grams). Pour in 1 can (15 oz / 425 g) of tomato sauce, 1/2 cup (120 ml) low-sodium chicken broth, and the chopped veggies.
  3. Add 1 teaspoon dried Italian seasoning, 1/2 teaspoon smoked paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Stir gently to combine all ingredients but avoid breaking up the chicken.
  4. Transfer the mixture into a heavy-duty freezer bag. Press out as much air as possible before sealing to prevent freezer burn.
  5. Lay bags flat on a baking sheet and freeze for at least 4 hours or until solid. Once frozen, you can stack or store them upright to save space.
  6. Remove the bag from freezer the night before and thaw in the fridge, or for a quick thaw, submerge the sealed bag in cold water for 1-2 hours.
  7. Pour the contents into the crockpot. Cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender and cooked through (internal temp 165°F / 74°C).
  8. If you like a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into the crockpot in the last 30 minutes of cooking.

Notes

Remove as much air as possible from freezer bags to prevent freezer burn. Use chicken thighs for juicier results; if using breasts, monitor cooking time and add extra broth if needed. Thaw overnight for best texture or use cold water thawing for quicker prep. Optional thickening with cornstarch improves sauce consistency. Customize seasonings to taste, adding red pepper flakes or cayenne for heat.
