A quick and flavorful keto-friendly stuffed peppers recipe that is low in carbs, easy to prepare, and perfect for weeknight dinners.

  • 4 large bell peppers (red, yellow, or green)
  • 1 lb ground meat (beef, turkey, or chicken)
  • 1 cup cauliflower rice (100g), finely chopped or store-bought
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 4 oz cream cheese (115g), softened
  • 1 cup shredded cheese (cheddar or mozzarella, 100g)
  • 2 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • ½ tsp chili powder
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Optional: chopped parsley or cilantro for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off each bell pepper and carefully remove the seeds and membranes. Trim bottoms slightly if needed to stand upright.
  3. Heat olive oil in a skillet over medium heat. Sauté diced onions for about 3 minutes until soft and translucent. Add garlic and cook for 30 seconds until fragrant.
  4. Add ground meat, break it up with a spoon, and brown for 5-7 minutes until fully cooked. Drain excess fat if necessary.
  5. Stir in cauliflower rice, tomato paste, smoked paprika, cumin, chili powder, salt, and pepper. Cook for another 3-4 minutes until cauliflower rice softens.
  6. Remove from heat and stir in softened cream cheese until melted and evenly distributed. Adjust seasoning if needed.
  7. Spoon the filling into each pepper cavity generously but do not overfill.
  8. Place stuffed peppers tightly in a baking dish and sprinkle shredded cheese on top.
  9. Bake uncovered for 25-30 minutes until peppers are tender and cheese is bubbly and golden.
  10. Let rest for 5 minutes before serving.

Notes

Do not overcrowd the pan when browning meat to avoid steaming. Use softened cream cheese to prevent lumps. If peppers brown too fast in oven, cover loosely with foil. Drain excess liquid from filling if too wet before stuffing. Optional: add crushed pork rinds on top for extra texture.
