  • 1 tablespoon olive oil or avocado oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons taco seasoning (homemade or store-bought)
  • 1 cup (240ml) diced tomatoes, drained
  • 1 cup (about 100g) shredded sharp cheddar cheese
  • 1 small jalapeño, seeded and chopped (optional)
  • 2 tablespoons fresh cilantro, chopped
  • Salt and pepper to taste
  • Lime wedges for serving

Instructions

  1. Heat the skillet over medium-high heat and add 1 tablespoon of oil. Let it warm until shimmering (about 1-2 minutes).
  2. Add diced onions and cook for 3-4 minutes until softened and translucent. Toss in minced garlic and cook for another 30 seconds until fragrant.
  3. Crumble the ground beef into the skillet. Spread it out and let it sear without stirring for about 3 minutes to develop a crispy crust.
  4. Stir and break the beef into smaller pieces. Sprinkle 2 tablespoons taco seasoning evenly and mix well to coat all the meat.
  5. Stir in diced tomatoes, reduce heat to medium, and cook together for 5 minutes to meld flavors and evaporate excess moisture.
  6. Evenly sprinkle shredded cheddar cheese over the beef mixture. Increase heat to medium-high and cover the skillet with a lid or foil for 2-3 minutes until cheese melts and edges crisp up.
  7. Remove from heat. Sprinkle chopped jalapeños and fresh cilantro on top. Serve with lime wedges on the side.

Notes

Do not rush the sear to get a crispy crust on the beef. Drain excess fat if needed to avoid sogginess. Watch the cheese carefully to achieve a golden crust without burning. Use a well-seasoned cast iron skillet for best results. For dairy-free, substitute cheddar with a dairy-free melting cheese or nutritional yeast.
