  • 750 ml (25 fl oz) sparkling champagne or sparkling wine, chilled (dry Brut style recommended)
  • 3 tablespoons (21 grams) unflavored gelatin powder
  • 1 cup (240 ml) cold water
  • 1/2 cup (100 grams) sugar
  • 2 tablespoons fresh lemon juice
  • Optional: edible gold glitter or sprinkles

Instructions

  1. Pour 1 cup (240 ml) cold water into a mixing bowl. Sprinkle 3 tablespoons (21 grams) of unflavored gelatin evenly over the surface. Let it sit for about 5 minutes until the gelatin absorbs the water and becomes spongy.
  2. Transfer the bloomed gelatin to a medium saucepan. Add 1/2 cup (100 grams) of sugar. Gently warm over low heat, stirring constantly. Do not let it boil. Dissolve the gelatin and sugar fully, resulting in a clear, smooth liquid (about 3-5 minutes).
  3. Remove the pan from heat and stir in 2 tablespoons fresh lemon juice.
  4. Pour in 750 ml chilled sparkling champagne slowly. Stir gently but thoroughly to combine, preserving as many bubbles as possible.
  5. Immediately pour the mixture into jello shot molds or small cups (1 to 2 oz / 30-60 ml size). Work quickly before the gelatin starts setting.
  6. Place molds in the refrigerator for at least 4 hours (overnight is better) to allow full setting. The jello shots should be firm but still jiggle nicely when moved.
  7. Pop the jello shots from their molds or serve directly in cups. For an extra festive touch, sprinkle edible glitter or tiny sprinkles on top just before serving.

Notes

Do not boil the gelatin mixture to avoid grainy texture and loss of setting power. Pour champagne gently to preserve bubbles. Chill for at least 4 hours; do not rush by freezing. Avoid shaking molds after pouring to keep bubbles intact. Optional edible glitter adds festive sparkle.
