  • 1 medium yellow onion, thinly sliced
  • 1/2 cup (120 ml) milk (whole or 2%, or almond/oat milk for dairy-free)
  • 1/2 cup (about 50g) shredded cheese (Gruyère or sharp cheddar recommended)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Pinch of nutmeg (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a non-stick skillet over medium-low heat. Add sliced onions and a pinch of salt. Cook slowly, stirring occasionally, for 20-25 minutes until onions are soft, golden, and fragrant.
  3. While onions cook, roughly chop fresh spinach. If using frozen spinach, thaw and squeeze out excess moisture.
  4. In a medium bowl, whisk together eggs, milk, salt, black pepper, and nutmeg until smooth and slightly frothy.
  5. Fold caramelized onions, chopped spinach, and shredded cheese into the egg mixture gently but thoroughly.
  6. Lightly grease each cup of a 12-cup muffin tin or use silicone liners.
  7. Pour the mixture evenly into each muffin cup, filling about 3/4 full.
  8. Bake in the preheated oven for 18-22 minutes, checking doneness with a toothpick. Tops should be lightly golden and springy.
  9. Let the quiche bites cool in the pan for 5 minutes before removing.

Caramelize onions slowly over low heat to avoid bitterness and develop sweetness. Drain spinach thoroughly to prevent soggy quiches. Use room temperature eggs and milk for better texture. Do not overfill muffin cups to avoid overflow. Test for doneness starting at 18 minutes. These quiche bites reheat well in oven or toaster oven.
