  • 2 tablespoons milk (any kind, including dairy-free)
  • Optional: pinch of salt

Instructions

  1. Line a 9×13-inch baking dish with parchment paper or lightly grease it and set aside.
  2. In a medium saucepan over low heat, melt 6 tablespoons (85 g) of unsalted butter, about 3 minutes, avoiding browning.
  3. Stir in 10 ounces (about 280 g) of marshmallows and continue stirring gently until fully melted and smooth, about 5 minutes.
  4. Remove from heat and stir in 1 teaspoon vanilla extract and a pinch of salt if using.
  5. In a separate bowl, whisk together 1 cup (120 g) powdered sugar with 2 tablespoons milk until smooth, then fold into the marshmallow mixture to create frosting.
  6. Quickly add 6 cups (about 180 g) Lucky Charms cereal to the marshmallow frosting mixture and fold gently but thoroughly to coat all cereal.
  7. Transfer mixture into the prepared baking dish and press down firmly and evenly using a parchment paper-lined spatula or lightly greased hands.
  8. Let the treats sit at room temperature for about 1 hour or refrigerate for 30 minutes to set.
  9. Use a sharp knife warmed under hot water and dried to cut the treats into squares or shapes.

Melt butter and marshmallows on low heat to avoid burning. Work quickly when mixing cereal with marshmallow frosting to prevent clumps.
