Quick and easy no-bake cookie dough bites that deliver a chewy, buttery texture with chocolate chips, perfect for a guilt-free treat without baking.

Ingredients

Scale
  • 1 cup all-purpose flour (heat-treated)
  • 1/2 cup unsalted butter, softened
  • 1/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 12 tablespoons milk (whole or 2%, dairy-free milk works too)
  • 1/4 teaspoon salt
  • 1/3 cup mini chocolate chips
  • Optional: 1/4 cup creamy peanut butter
  • Optional: chopped nuts like walnuts or pecans

Instructions

  1. Heat-treat the flour: Spread 1 cup (120 g) of all-purpose flour on a baking sheet and bake at 350°F (175°C) for about 5 minutes. Let it cool completely before using.
  2. Cream the butter and sugars: In a medium bowl, beat 1/2 cup (113 g) softened unsalted butter with 1/4 cup (50 g) brown sugar and 1/4 cup (50 g) granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add vanilla and milk: Stir in 1 teaspoon pure vanilla extract and 1-2 tablespoons milk, adding just enough milk to help the dough come together but not get too sticky.
  4. Mix in flour and salt: Gradually add the cooled heat-treated flour and 1/4 teaspoon salt, mixing until just combined. The dough should feel soft and a bit dense—not dry or crumbly.
  5. Fold in chocolate chips: Gently stir in 1/3 cup (60 g) mini chocolate chips. If using, add 1/4 cup (60 g) creamy peanut butter and mix well.
  6. Form the bites: Using a teaspoon or small cookie scoop, portion the dough into bite-sized balls (about 1 inch or 2.5 cm). Place them on a parchment-lined tray.
  7. Chill: Refrigerate for at least 30 minutes to let the bites firm up.
  8. Serve and enjoy: Keep chilled until ready to eat or let sit a few minutes at room temperature for a softer texture.

Notes

Heat-treating the flour is essential for safety since the dough is not baked. Chill the bites for at least 30 minutes to firm up and prevent them from falling apart. Use mini chocolate chips for best texture. If dough is too sticky, refrigerate before rolling. Avoid overmixing after adding flour to keep bites tender.
