A quick and easy Instant Pot recipe that transforms chicken breasts into tender, juicy, and flavorful meals perfect for busy weeknights and meal prep.

  • 2 boneless, skinless chicken breasts (about 1 pound or 450 grams)
  • 1 cup (240 ml) chicken broth or stock (low-sodium recommended)
  • 1 tablespoon olive oil (optional, for searing)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • ½ teaspoon dried thyme or oregano (optional)

Instructions

  1. In a mixing bowl, combine garlic powder, onion powder, paprika, salt, pepper, and dried herbs. Rub the seasoning evenly over both sides of the chicken breasts.
  2. Optional: Turn Instant Pot to ‘Sauté’ mode and add olive oil. Once hot, sear chicken breasts for about 2 minutes per side until lightly golden. Skip if short on time.
  3. Pour chicken broth into the Instant Pot. Place chicken breasts on the trivet or directly in the liquid. Secure lid, set valve to sealing, and select ‘Pressure Cook’ or ‘Manual’ on high pressure for 8 minutes (adjust ±1 minute for size).
  4. Allow natural pressure release for 5 minutes, then carefully perform a quick release to release remaining pressure.
  5. Open lid and check internal temperature with a meat thermometer; it should read 165°F (74°C). If under, close lid and let rest with heat off for a few minutes. Remove chicken and let rest on cutting board for 5 minutes before slicing or serving.

Notes

Searing the chicken is optional but adds extra flavor and color. Always allow natural pressure release for at least 5 minutes to keep chicken juicy. Use a meat thermometer to ensure doneness. Rest chicken for 5 minutes before slicing to redistribute juices. Clean Instant Pot sealing ring regularly to avoid flavor carryover.
