  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder (optional)
  • 1 cup chopped vegetables (bell peppers, spinach, broccoli, or zucchini)
  • ½ cup cooked protein (crumbled sausage, diced ham, or leftover bacon)
  • 2 green onions, sliced

Instructions

  1. Preheat oven to 375°F (190°C). Grease an 8×8 or 9×9 baking dish with butter or non-stick spray.
  2. Prep vegetables and protein: dice fresh veggies into ½-inch pieces; thaw frozen spinach and squeeze dry; chop cooked protein into bite-sized pieces.
  3. In a large bowl, whisk 8 eggs until frothy, about 30 seconds.
  4. Add 1 ½ cups cottage cheese and ½ cup milk. Whisk until mostly combined (small curds are fine).
  5. Stir in ½ teaspoon salt, ¼ teaspoon pepper, ¼ teaspoon garlic powder, and 1 cup shredded cheddar until evenly distributed.
  6. Fold in chopped vegetables, cooked protein, and sliced green onions until just combined.
  7. Pour mixture into prepared dish and spread into an even layer. Optionally, sprinkle extra cheese on top.
  8. Bake for 30-35 minutes, until edges are golden and center is set but slightly wobbly (like cheesecake).
  9. Let rest for 5-10 minutes before slicing. Internal temperature should reach 160°F (71°C).
  10. Slice into 6 or 9 portions. Serve warm, at room temperature, or cold.

Don’t drain the cottage cheese; the whey adds moisture. Use room temperature eggs for fluffier texture. Avoid overbaking—pull when center still has a slight wobble.
