Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with parchment paper liners.
  2. In a large bowl, whisk together pumpkin puree, eggs, maple syrup, milk, melted coconut oil, and vanilla extract until smooth.
  3. In a separate medium bowl, mix rolled oats, pumpkin pie spice, cinnamon, baking powder, and salt with a fork until evenly distributed.
