  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup chopped pecans
  • 1/2 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 400°F (200°C). Scrub sweet potatoes clean and prick them with a fork. Roast directly on oven rack with a baking sheet below to catch drips for 45-60 minutes until tender. Let cool, then peel off skins. Alternatively, peel and cube sweet potatoes, boil in salted water for 15-20 minutes until fork-tender, then drain well.
  2. In a large bowl, mash sweet potatoes until mostly smooth. Add melted butter, brown sugar, eggs, vanilla, cinnamon, nutmeg, and salt. Mix until well combined and uniform.
  3. In a separate medium bowl, combine chopped pecans, flour, brown sugar, cinnamon, and salt. Pour melted butter over the top and stir with a fork until mixture resembles wet sand with some larger clumps. Do not overmix.
  4. Reduce oven temperature to 350°F (175°C). Grease a 9×13 inch baking dish. Pour sweet potato mixture into dish and spread evenly. Sprinkle streusel evenly over the top without pressing down.
  5. Bake for 25-30 minutes until streusel is golden brown and edges are bubbling slightly. Let rest for 10 minutes before serving.
