Ingredients

  • Aged Cheddar, sharp, sliced into thin wedges
  • Brie or Camembert, soft-ripened, served at room temperature
  • Manchego, firm, sliced into thin triangles
  • Blue Cheese, like Gorgonzola or Roquefort, crumbled or in wedges
  • Goat Cheese, soft log, sliced into rounds or left whole
  • Prosciutto, thinly sliced, ribbons or folded
  • Salami, like Genoa or Soppressata, sliced into thin rounds
  • Capicola, thinly sliced
  • Chorizo, dried or semi-cured, sliced
  • Honey, preferably local or wildflower honey
  • Almonds, raw or smoked, toasted
  • Walnuts, halved or roughly chopped, toasted
  • Pecans, candied or plain, toasted
  • Cashews, roasted and salted
  • Crackers, a mix of plain water crackers and something seedy or herbed
  • Bread, sliced baguette or crusty sourdough, toasted if desired
  • Dried Fruit, like figs, apricots, or dates
  • Fresh Fruit, like grapes, apple slices, or pear slices
  • Olives, mixed, pitted
  • Cornichons or Pickles, small gherkins
  • Jam or Chutney, like fig jam or onion chutney (optional)

Instructions

  1. Toast the Nuts (5 minutes): Heat a dry skillet over medium heat. Add your almonds, walnuts, or pecans in a single layer. Toast for 2-3 minutes, shaking the pan occasionally, until fragrant and lightly golden. Watch closely — nuts burn fast! Transfer to a small bowl to cool completely.
  2. Warm the Honey (2 minutes): If your honey is crystallized or thick, place the jar in a bowl of warm water for 5-10 minutes. Or microwave it in a small bowl for 10-15 seconds. You want it runny enough to drizzle, not hot. Set aside in a small bowl or ramekin with a small spoon for drizzling.
  3. Prep the Cheeses (5 minutes): Take your cheeses out of the fridge 20-30 minutes before serving — room temperature cheese tastes so much better. Slice the hard cheeses (cheddar, manchego) into thin wedges or triangles. Leave soft cheeses (brie, goat cheese) whole or slice into rounds. Place them on the board first, spaced evenly apart.
  4. Arrange the Meats (3 minutes): Fold or roll the sliced meats into ribbons, rosettes, or loose piles. Place them near the cheeses. Prosciutto can be draped in loose folds; salami slices can be stacked or fanned out. Don’t overthink it — just make them look inviting.
  5. Add the Accompaniments (5 minutes): Fill small bowls with olives, cornichons, jam, and your toasted nuts. Place them around the board, filling in gaps. Add clusters of dried figs, fresh grapes, and apple slices directly on the board. Scatter the nuts and dried fruit in small piles between the cheeses and meats.
  6. Drizzle the Honey (1 minute): Just before serving, drizzle the warm honey over the cheeses, nuts, and fruit. Don’t drown everything — a few artistic zigzags are perfect. You can also serve it on the side if you prefer.
  7. Fill the Gaps with Crackers and Bread (2 minutes): Arrange crackers and sliced baguette around the edges of the board, overlapping slightly. Fill any empty spaces with extra nuts or dried fruit. The board should look abundant, not sparse. If you see wood, add more crackers.
  8. Final Check (1 minute): Step back and look at your board. Add a few more drizzles of honey if it feels dry. Sprinkle a pinch of flaky sea salt over the nuts and cheese for an extra pop. Serve immediately, or let it sit at room temperature for up to an hour.
