Instructions

  1. Preheat your oven to 400°F (200°C). Place a 10-inch oven-safe skillet in the oven while it preheats.
  2. Prepare the apples: Peel, core, and thinly slice the apples (about ¼-inch thick). Toss them in a bowl with 1 teaspoon of lemon juice to prevent browning. Set aside.
  3. Make the batter: In a medium bowl, whisk together the flour, ½ teaspoon cinnamon, and salt. In a separate small bowl, whisk the eggs until frothy, then add the milk and vanilla extract. Pour the wet ingredients into the dry ingredients and whisk until smooth. Do not overmix; a few small lumps are fine.
  4. Cook the apples: Carefully remove the hot skillet from the oven (use oven mitts!). Add 2 tablespoons of butter and swirl until melted. Sprinkle the 2 tablespoons of granulated sugar and remaining ½ teaspoon cinnamon over the melted butter. Arrange the apple slices in a single, overlapping layer in the skillet. Let them cook over medium heat on the stovetop for 3-4 minutes, until they start to soften and the butter-sugar mixture becomes bubbly and golden. Do not stir.
  5. Add the batter: Pour the prepared batter evenly over the apples. Do not stir.
  6. Bake: Transfer the skillet to the oven and bake for 15-18 minutes, until the pancake is puffed up, golden brown around the edges, and set in the center. It should feel firm to the touch but still slightly jiggly in the very middle.
  7. Serve immediately: Remove from the oven and let cool for 1-2 minutes. Run a spatula around the edges to loosen the pancake, then carefully invert it onto a plate or cutting board (the apples will be on top). Alternatively, serve it directly from the skillet. Dust generously with powdered sugar and serve warm.
