  • 12 oz beer (light lager, pilsner, or Oktoberfest-style)
  • 1 large sweet onion, sliced into half-rings
  • 2 bell peppers (assorted colors), sliced into strips
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 teaspoon caraway seeds (optional)
  • Kosher salt and black pepper, to taste
  • 46 hoagie or brat buns
  • Optional toppings: spicy brown mustard, sauerkraut, pickled jalapeños

Instructions

  1. Prep the vegetables: Slice the onion into 1/4-inch thick half-rings and bell peppers into similar-sized strips. Mince the garlic and set aside.
  2. Prick each bratwurst 3-4 times with a fork to prevent bursting and allow flavor absorption.
  3. Place brats in a cold skillet in a single layer. Pour beer over them (liquid should come about halfway up the sides). Add water if needed to barely cover. Bring to a gentle simmer over medium heat, then reduce to low. Cook for 15-18 minutes, turning once halfway.
  4. Transfer brats to a plate. Reserve the beer liquid. Wipe the skillet clean and return to medium-high heat.
  5. Add butter to the hot skillet. Once melted and foaming, add onions and peppers. Season with salt and caraway seeds (if using). Cook for 8-10 minutes, stirring occasionally, until soft and browned. Add garlic in the last 2 minutes. Deglaze with a splash of reserved beer liquid if needed.
  6. Push vegetables to one side. Return brats to the pan and cook for 2-3 minutes per side until browned and crispy.
  7. Let brats rest for 2 minutes. Serve on toasted buns with onions and peppers piled on top. Add optional toppings as desired.

Notes

Don’t boil the brats—keep at a gentle simmer to avoid toughness. Use a drinkable lager or Oktoberfest beer; avoid hoppy IPAs. Save the reserved beer liquid for deglazing or making a mustard sauce. Toast the buns in butter for extra texture. For best results, let brats rest before serving.
