Best One-Pan Honey Garlic Chicken Thighs with Broccoli

Tender, caramelized chicken thighs and charred broccoli come together in a sticky honey garlic sauce, all cooked in a single skillet for minimal cleanup. This 30-minute weeknight dinner is a happy accident turned family favorite.

  • 4 bone-in, skin-on chicken thighs (or boneless, skinless; reduce cooking time by 57 minutes)
  • 2 cups broccoli florets (fresh preferred; frozen, thawed and patted dry, works in a pinch)
  • 1/4 cup honey (mild floral like clover or orange blossom; reduce to 3 tbsp for less sweet)
  • 1/4 cup soy sauce (low-sodium, tamari, or coconut aminos for gluten-free)
  • 45 cloves garlic, minced
  • 2 tablespoons olive oil (plus extra for searing)
  • Salt and freshly ground black pepper, to taste
  • Pinch red pepper flakes (optional, for heat)
  • 1 tablespoon sesame seeds (for garnish, optional)
  • 2 green onions, sliced (for garnish, optional)

Instructions

  1. Pat chicken thighs dry with paper towels. Season both sides generously with salt and pepper.
  2. In a small bowl, whisk together 1/4 cup honey, 1/4 cup soy sauce, and 2 tablespoons olive oil. Set aside.
  3. Heat a large skillet (12-inch cast iron preferred) over medium-high heat. Add 1 tablespoon olive oil and heat until shimmering, about 2 minutes.
  4. Place chicken skin-side down in the hot pan. Cook undisturbed for 5-6 minutes until skin is golden and crispy. Flip and cook 3-4 minutes more. Chicken will not be fully cooked through.
  5. Push chicken to one side of the pan. Add minced garlic to the empty space and cook 30 seconds, stirring constantly, until fragrant.
  6. Pour honey-soy mixture over the chicken. Add 1/4 cup water to the pan. Bring to a simmer, then reduce heat to medium-low.
  7. Tuck broccoli florets around the chicken, nestling into the sauce. Cover and cook 8-10 minutes until broccoli is tender-crisp.
  8. Optional: Transfer skillet to a preheated broiler for 2-3 minutes, watching closely, until sauce is bubbly and caramelized.
  9. Let rest 5 minutes before serving. Garnish with sesame seeds and green onions if desired.

Notes

Pat chicken dry for crispy skin. Don’t crowd the pan. Adjust honey-to-soy ratio to taste. Watch broiler closely to prevent burning. Leftovers keep 4 days in fridge or 3 months frozen. Reheat in skillet with a splash of water.
