  • 1 cup pecans, chopped and toasted

Instructions

  1. Brown the butter: Place butter in a light-colored saucepan over medium heat. Stir occasionally as it melts. It will foam, then bubble, then turn golden. Watch for brown specks forming at the bottom. Once it smells nutty and looks amber (about 5-7 minutes), remove from heat immediately. Pour into a heatproof bowl to stop cooking. Let cool for 10 minutes.
  2. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  3. Mix dry ingredients: In a medium bowl, whisk together flour, baking soda, cream of tartar, salt, and 1 teaspoon cinnamon. Set aside.
  4. Combine wet ingredients: In a large bowl, whisk cooled brown butter with granulated sugar, brown sugar, and maple syrup until smooth and glossy. Add egg and vanilla extract, whisk until fully combined.
  5. Fold in dry ingredients: Pour flour mixture into wet mixture. Use a rubber spatula to fold gently until just combined. Do not overmix.
  6. Add pecans: Fold in chopped pecans until evenly distributed.
  7. Make cinnamon sugar coating: In a small bowl, mix together remaining 2 tablespoons cinnamon and ¼ cup granulated sugar.
  8. Scoop and coat: Use a cookie scoop (1.5 tablespoon size) to portion dough into balls. Roll each ball in cinnamon sugar mixture until fully coated. Place on prepared baking sheets, about 2 inches apart.
  9. Bake: Bake for 10-12 minutes, until edges are set and lightly golden. Centers will look puffy and slightly underdone.
  10. Cool: Let cookies cool on baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.

Brown butter is forgiving but not that forgiving—watch it closely. Room temperature egg matters; if forgotten, place egg in warm water for 5 minutes. Don’t skip cream of tartar; it gives the signature tang. Toast pecans for extra depth. If cookies spread too much, chill dough balls for 15 minutes before baking. Store in airtight container at room temperature for up to 5 days. Freeze baked cookies for up to 3 months or dough balls for later use.
