  • 2 cups (280g) cooked shredded chicken (rotisserie chicken recommended)
  • 8 oz (225g) cream cheese, softened
  • ½ cup (120ml) buffalo wing sauce
  • 1 tsp ranch seasoning mix
  • 1 cup (115g) shredded cheddar cheese
  • ½ tsp garlic powder
  • Salt and black pepper to taste
  • Optional: green onions, thinly sliced for garnish
  • Optional: blue cheese crumbles for topping
  • Optional: dairy-free cream cheese and cheese alternatives for lactose-free version

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Rinse and pat dry the mini sweet peppers. Slice each pepper in half lengthwise and remove seeds and membranes carefully without tearing the skin. Set aside.
  3. In a medium bowl, beat the softened cream cheese with a hand mixer until smooth and creamy.
  4. Add the shredded cooked chicken to the cream cheese and mix gently until combined.
  5. Stir in buffalo wing sauce, ranch seasoning, garlic powder, and shredded cheddar cheese. Mix until evenly incorporated. Season with salt and pepper to taste.
  6. Spoon the buffalo chicken mixture into each pepper half, filling generously but without overflowing.
  7. Arrange the stuffed peppers on the prepared baking sheet, cut side up.
  8. Bake for 15-18 minutes, or until the filling is bubbly and the tops start to turn golden.
  9. Optional: Sprinkle green onions or blue cheese crumbles over the peppers immediately after baking.
  10. Let cool for 5 minutes before serving.

Notes

Soften cream cheese before mixing to avoid lumps. Do not overstuff peppers to prevent sogginess. Use a mix of cheeses for best flavor and texture. Optionally broil 1-2 minutes for extra crisp on top but watch closely to avoid burning. Filling can be loosened with a splash of milk or extra buffalo sauce if too stiff.
