  • 4 cups (about 600g) broccoli florets, fresh or frozen
  • 2 cups (about 200g) sharp cheddar cheese, shredded
  • 1 can (10.5 oz / 300g) condensed cream of mushroom soup
  • 1/2 cup (120ml) sour cream
  • 1/2 cup (120ml) mayonnaise
  • 1 sleeve (about 30 crackers) Ritz crackers, crushed
  • 4 tablespoons (60g) butter, melted
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch (23×33 cm) casserole dish lightly with butter or non-stick spray.
  2. Cook and prepare the broccoli. If using fresh broccoli, steam or boil florets for about 3-4 minutes until just tender but still bright green. Drain well and pat dry to avoid watery casserole. For frozen broccoli, thaw fully and squeeze out excess moisture with a clean kitchen towel.
  3. In a medium mixing bowl, combine the condensed cream of mushroom soup, sour cream, mayonnaise, onion powder, garlic powder, salt, and pepper. Mix until smooth and well blended.
  4. Add in shredded cheddar cheese, reserving about 1/2 cup (50g) for topping later. Stir the cheese into the sauce mixture for even cheesy flavor throughout.
  5. Fold the prepared broccoli into the sauce and cheese mixture gently, so every floret is coated but not mashed. Transfer this mixture evenly into your greased casserole dish.
  6. Crush the Ritz crackers finely but not to dust. Combine the crushed crackers with melted butter in a small bowl, mixing until the crumbs are evenly coated.
  7. Sprinkle the reserved cheddar cheese evenly over the broccoli mixture in the casserole dish. Then, top with the buttery crushed Ritz crackers.
  8. Bake uncovered in the preheated oven for 25-30 minutes, or until the topping is golden brown and the casserole is bubbling around the edges.
  9. Remove from oven and let rest for 5 minutes before serving.

Notes

If casserole seems too watery, squeeze out more liquid from broccoli or add a tablespoon of flour or cornstarch to the sauce to thicken. Use freshly grated cheddar cheese for better melting. Crush Ritz crackers to a medium consistency for best crunch. Check oven around 20 minutes to prevent burning of topping. For a gluten-free option, use gluten-free cream of mushroom soup and crackers or substitute with crushed nuts.
