Ingredients

Scale
  • 2 ½ cups (312 g) all-purpose flour, sifted
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup (227 g) unsalted butter, softened
  • 1 ¾ cups (350 g) granulated sugar
  • 4 large eggs, room temperature
  • 1 cup (240 ml) whole milk or buttermilk
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon lemon zest
  • 2 cups (about 300 g) fresh strawberries, hulled and diced, plus extra for garnish
  • 4 cups (480 g) powdered sugar
  • ½ cup (120 ml) heavy cream, chilled
  • 8 ounces (227 g) cream cheese, softened
  • ½ cup (160 g) strawberry jam or preserves

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.
  2. In a medium bowl, whisk together sifted flour, baking powder, and salt. Set aside.
  3. Using an electric mixer, beat softened butter and granulated sugar on medium-high speed until pale and fluffy, about 3-5 minutes.
  4. Add eggs one at a time, mixing well after each addition.
  5. Reduce mixer speed to low. Alternately add dry flour mixture and milk in three additions, starting and ending with flour. Stir in vanilla extract and lemon zest. Do not overmix.
  6. Gently fold diced strawberries into the batter with a rubber spatula.
  7. Divide batter evenly between prepared pans. Bake 30-35 minutes or until a toothpick inserted in the center comes out clean. Rotate pans halfway through baking.
  8. Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely (about 1 hour).
  9. Prepare frosting by beating cream cheese with chilled heavy cream until smooth. Gradually add powdered sugar until fluffy. Stir in strawberry jam.
  10. Assemble cake by placing one layer on a plate, spreading a thin layer of frosting, then a spoonful of strawberry jam. Top with second layer and frost top and sides evenly. Garnish with fresh strawberries.

Notes

Bring eggs and butter to room temperature before starting. Gently fold strawberries to avoid turning batter pink. Chill frosting if too soft before applying. Let cake cool completely before frosting to prevent melting.
