  • 2 slices good quality bread (white, sourdough, or whole wheat)
  • 2 tablespoons (28 g) unsalted butter (softened)
  • Pinch of sea salt flakes
  • Freshly ground black pepper (optional)

Instructions

  1. Bring water to a boil in a small saucepan, enough to cover the eggs by about an inch.
  2. Using a slotted spoon, gently lower 2 large room temperature eggs into the boiling water.
  3. Boil the eggs for exactly 6 minutes for a perfect soft center.
  4. Remove eggs immediately and place them in cold water for 1-2 minutes to stop cooking.
  5. Toast 2 slices of sturdy bread until golden and crisp, then cut each slice into 6 even strips (soldiers) using a serrated knife.
  6. Peel the eggs and separate the yolks into a mixing bowl.
  7. Mash the yolks with 2 tablespoons softened unsalted butter, a pinch of sea salt flakes, and a crack of black pepper until smooth and creamy.
  8. Arrange the toast soldiers on a plate with a small bowl of the egg dip and serve immediately.

Notes

Use room temperature eggs to prevent cracking and ensure even cooking. Let butter soften at room temperature for at least 30 minutes before mixing to avoid lumps. Peel eggs while still slightly warm for easier shell removal. Use sturdy bread like sourdough or thick white bread for best results. The egg dip can be made ahead and refrigerated for up to 2 days, but toast soldiers are best served fresh.
