  • 2 pounds (900g) Yukon Gold potatoes, cut into 1-inch chunks
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried parsley
  • 1 packet (1 ounce/28g) ranch seasoning mix
  • Salt and black pepper to taste
  • 1/4 cup (60ml) chicken broth or vegetable broth

Instructions

  1. Wash and scrub 2 pounds (900g) of Yukon Gold potatoes. Cut them into 1-inch chunks, aiming for uniform size so they cook evenly. No need to peel unless you prefer.
  2. In a large mixing bowl, combine the potato chunks with 2 tablespoons olive oil, 1 tablespoon Cajun seasoning, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon smoked paprika, 1 teaspoon dried parsley, and salt and pepper to taste. Mix thoroughly so every piece is coated.
  3. Sprinkle in 1 packet (about 1 ounce/28g) of ranch seasoning mix and pour 1/4 cup (60ml) chicken or vegetable broth over the potatoes. Stir gently to distribute the ranch mix without over-mushing the potatoes.
  4. Pour the seasoned potatoes into your slow cooker, spreading them out evenly. Avoid overcrowding.
  5. Cover and cook on low for 4 to 5 hours. Check for doneness starting at 4 hours by piercing a potato chunk with a fork—it should slide in easily but potatoes shouldn’t be falling apart.
  6. If using shredded cheddar cheese, sprinkle it over the potatoes in the last 15 minutes of cooking and replace the lid to let it melt.
  7. Once done, give the potatoes a gentle stir to mix in any settled seasonings. Taste and adjust salt and pepper if needed. Garnish with chopped green onions or fresh parsley.

Notes

If the slow cooker gets dry, add a splash more broth or water to keep potatoes tender but not soggy. For crispier edges, sear potatoes in a hot skillet before slow cooking. Avoid overcrowding the slow cooker to prevent mushy potatoes. Adjust Cajun seasoning to taste for spice level. Use low-sodium ranch and broth to control salt. Can be made dairy-free by substituting ranch seasoning.
