  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 28 oz can crushed tomatoes
  • 2 tablespoons tomato paste
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • ¼ cup mascarpone cheese
  • 8 oz lasagna noodles, broken into 12 inch pieces
  • 3 cups fresh spinach (optional)
  • 1 cup shredded mozzarella cheese (for serving)
  • Fresh parsley or basil (for garnish)

Instructions

  1. Brown the Sausage: Heat a large skillet over medium-high heat. Add the Italian sausage (casings removed) and cook, breaking it up with a wooden spoon, until browned and cooked through, about 6-8 minutes. Transfer the cooked sausage to your slow cooker using a slotted spoon, leaving a tablespoon or two of drippings in the skillet.
  2. Sauté the Aromatics: In the same skillet, add the diced onion and cook over medium heat until softened, about 4 minutes. Add the minced garlic and cook for another 30 seconds until fragrant. Scrape the onions and garlic into the slow cooker with the sausage.
  3. Build the Broth: Add the crushed tomatoes, tomato paste, chicken broth, dried basil, dried oregano, and red pepper flakes (if using) to the slow cooker. Stir everything together until the tomato paste is fully incorporated. Season with a pinch of salt and a few grinds of black pepper. Cover and cook on low for 6 hours or on high for 3 hours.
  4. Add the Pasta: About 30 minutes before you’re ready to serve, stir in the broken lasagna noodles. Make sure they’re fully submerged in the broth. Cover and cook on high for 20-25 minutes, or until the pasta is tender but still has a little bite.
  5. Finish with Mascarpone and Spinach: Once the pasta is cooked, stir in the mascarpone cheese until it melts into the broth. If using spinach, add it now and stir until wilted, about 2 minutes. Taste and adjust seasoning with more salt, pepper, or red pepper flakes if needed.
  6. Serve and Garnish: Ladle the soup into bowls. Top each serving with a generous handful of shredded mozzarella cheese and a sprinkle of fresh parsley or basil. Serve immediately with crusty bread or a simple green salad.

Notes

For leftovers, cook the pasta separately and add to individual bowls when serving to prevent mushy noodles. The soup tastes even better the next day. If you don’t have a slow cooker, simmer on the stovetop for 45 minutes to 1 hour.
