  • 1 packet (about 1 ounce) au jus gravy mix (optional)
  • 78 whole pepperoncini peppers plus 1/4 cup (60 ml) pepperoncini juice
  • 1/2 cup (1 stick or 113 g) unsalted butter
  • 34 garlic cloves, minced
  • 1/2 teaspoon freshly ground black pepper
  • Optional: fresh parsley for garnish

Instructions

  1. Pat the chuck roast dry with paper towels and trim any excess fat if desired.
  2. Sprinkle the ranch seasoning evenly over all sides of the roast.
  3. Place the seasoned roast in the slow cooker insert.
  4. Pour the au jus gravy mix over the top of the roast without stirring.
  5. Arrange whole pepperoncini peppers on top of the roast, then pour 1/4 cup of pepperoncini juice evenly over everything.
  6. Slice the unsalted butter into pats and place them over the roast.
  7. Sprinkle minced garlic and black pepper evenly across the top.
  8. Cover and cook on low for 7 to 8 hours without opening the lid.
  9. After 7 hours, check tenderness with a fork; if not tender, cook an additional 30 minutes to 1 hour.
  10. Remove the roast and shred it with two forks directly in the crockpot, mixing with the juices.
  11. Let the shredded roast sit in the juices for a few minutes before serving.
  12. Garnish with fresh parsley if desired.
