  • 2 medium honeynut squash (about 1.5 lbs each)
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 4 tablespoons unsalted butter, divided
  • 1 large yellow onion, diced
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 3 sprigs fresh thyme
  • 1/2 cup heavy cream or coconut milk
  • 2 cups day-old sourdough bread, cubed
  • 68 fresh sage leaves

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper.
  2. Cut each honeynut squash in half lengthwise. Scoop out seeds and stringy bits. Place cut-side up on the baking sheet.
  3. Drizzle cut sides with olive oil and maple syrup. Sprinkle with smoked paprika, salt, and pepper. Rub to coat evenly. Flip cut-side down.
  4. Roast for 30-35 minutes until fork-tender and caramelized. Let cool slightly.
  5. While squash roasts, melt 2 tablespoons butter in a large soup pot over medium heat. Add onion and cook until soft, about 5 minutes. Add garlic and cook 1 minute.
  6. Add vegetable broth and thyme sprigs. Bring to a simmer, then reduce heat to low.
  7. Scoop squash flesh from skin (discard skin). Add flesh to the pot.
  8. Remove thyme sprigs. Use an immersion blender to puree until smooth. (Or blend in batches in a regular blender.)
  9. Stir in heavy cream or coconut milk. Season with salt and pepper to taste. Keep warm.
  10. In a medium skillet, melt remaining 2 tablespoons butter over medium heat. Swirl until butter turns golden brown with specks, about 3-4 minutes.
  11. Add cubed bread and sage leaves. Cook, stirring, until croutons are golden and crispy, about 4-5 minutes.
  12. Ladle soup into bowls. Top with croutons and crumbled crispy sage. Serve immediately.

Notes

Roasting the squash is essential for deep flavor. Watch brown butter closely to avoid burning. Use day-old bread for crispy croutons. Soup tastes even better the next day.
