  • 14 ounces kielbasa, sliced into half-moons
  • 1 small head green cabbage (about 1.5 pounds), chopped into bite-sized pieces
  • 1 medium yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep your ingredients: slice kielbasa into ¼-inch thick half-moons, dice onion, carrots, and celery, mince garlic, and chop cabbage into 1-inch pieces.
  2. Heat 1 tablespoon olive oil in a large pot over medium-high heat. Add kielbasa in a single layer and cook without moving for 3-4 minutes until browned. Flip and cook 2-3 minutes more. Transfer to a plate and set aside.
  3. Reduce heat to medium and add remaining 1 tablespoon olive oil. Add onion, carrots, and celery. Cook, stirring occasionally, for 5-7 minutes until softened and onion is translucent.
  4. Add minced garlic, dried thyme, and smoked paprika. Stir constantly for about 30 seconds until fragrant.
  5. Pour in about ½ cup chicken broth and scrape up browned bits from the bottom of the pot.
  6. Add chopped cabbage and undrained diced tomatoes. Stir to combine.
  7. Add remaining 5 ½ cups chicken broth, bay leaves, and browned kielbasa. Bring to a boil, then reduce heat to low and simmer uncovered for 25-30 minutes.
  8. Remove bay leaves. Taste and adjust seasoning with salt and pepper.
  9. Let soup rest off heat for 5 minutes before serving. Garnish with fresh parsley if desired.

Notes

For best flavor, brown the kielbasa well to create a fond. Use low-sodium broth and adjust salt at the end. The soup tastes even better the next day. To make it thicker, mash some cabbage against the pot or add a cornstarch slurry.
