Ingredients

Scale
  • 6 large apples (about 3 pounds), peeled, cored, and sliced (preferably a mix of Granny Smith and Honeycrisp)
  • 2 tablespoons fresh lemon juice
  • 1/3 cup maple syrup
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/4 teaspoon salt
  • 2 tablespoons all-purpose flour (or arrowroot powder for gluten-free)
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour (or almond flour for gluten-free)
  • 1/3 cup unsalted butter, cold and cut into small pieces
  • 1/3 cup maple syrup
  • 1/4 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon fine sea salt
  • Optional: 1/4 cup chopped pecans or walnuts

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish with butter or non-stick spray.
  2. Peel, core, and slice apples into 1/4-inch slices. Toss with lemon juice in a large bowl.
  3. Add maple syrup, cinnamon, nutmeg, salt, and flour to the apples. Stir to coat evenly.
  4. Transfer apple mixture to the prepared baking dish and spread evenly.
  5. In a separate bowl, combine oats, flour, brown sugar, cinnamon, sea salt, and nuts if using.
  6. Cut in cold butter using a pastry cutter or fingers until mixture is crumbly with pea-sized butter chunks.
  7. Stir in maple syrup until the topping is slightly sticky and holds together.
  8. Sprinkle oat topping evenly over the apple filling.
  9. Bake uncovered for 40-45 minutes until topping is golden brown and apples are bubbling and tender.
  10. Cool slightly for about 15 minutes before serving to thicken juices. Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

If topping browns too quickly, cover loosely with foil halfway through baking. Use thicker apple slices for better texture. Butter should be cold for best oat topping texture. Lemon juice prevents apple browning and adds brightness. Can substitute butter with coconut oil or vegan margarine for dairy-free option. Use almond or gluten-free flour for gluten-free version. Reheat leftovers in oven to maintain crispness.
