A quick and easy homemade latte with rich maple and pumpkin flavors, topped with a creamy cold foam that tastes like autumn in a mug.

Ingredients

Scale
  • 2 shots of espresso (or ½ cup strong brewed coffee)
  • 1 tablespoon maple syrup
  • ¼ teaspoon pumpkin pie spice
  • ½ cup milk of choice
  • ¼ cup heavy cream (or full-fat coconut cream for dairy-free)
  • 2 tablespoons milk
  • 1 tablespoon pumpkin purée
  • 1 tablespoon maple syrup
  • ¼ teaspoon pumpkin pie spice
  • Pinch of salt

Instructions

  1. Brew 2 shots of espresso or ½ cup of strong coffee. While still hot, stir in 1 tablespoon maple syrup and ¼ teaspoon pumpkin pie spice. Set aside to cool slightly.
  2. Warm ½ cup of milk in a small saucepan over medium heat or microwave for about 30 seconds until warm but not boiling. Pour into a mug, then pour the spiced maple espresso over the top. Stir gently.
  3. In a small bowl or wide-mouth jar, combine ¼ cup heavy cream, 2 tablespoons milk, 1 tablespoon pumpkin purée, 1 tablespoon maple syrup, ¼ teaspoon pumpkin pie spice, and a pinch of salt. Use a handheld frother to blend until thick and foamy, about 20–30 seconds.
  4. Pour the cold foam gently over the back of a spoon onto the coffee to keep layers distinct. Let sit for about 10 seconds to settle.
  5. Dust a tiny pinch of pumpkin pie spice or cinnamon over the top of the foam.
  6. Serve immediately while the cold foam is thick and the coffee is warm.

Notes

Cold foam works best with cold ingredients. If your cream is room temperature, it won’t whip up properly. Let your coffee cool for about a minute before adding the cold foam to prevent it from melting. For dairy-free, use full-fat coconut cream and oat milk.
