Cozy One-Pot Lasagna Soup with Italian Sausage – Easy Dinner

A quick and comforting one-pot lasagna soup with Italian sausage, rich tomato broth, tender noodles, and creamy ricotta. Perfect for busy weeknights when you need a hearty, satisfying meal in under an hour.

  • 1 pound Italian sausage, casings removed
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional)
  • 1 (28-ounce) can crushed tomatoes
  • 4 cups low-sodium chicken broth
  • 1 bay leaf
  • Salt and black pepper, to taste
  • 8 ounces lasagna noodles, broken into 2-inch pieces
  • Salt, for pasta water
  • 1 cup whole milk ricotta cheese
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil, chopped
  • 2 cups shredded mozzarella cheese

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Add Italian sausage and cook for 6-8 minutes, breaking it up with a wooden spoon, until browned and cooked through. Drain excess fat if desired, leaving about 1 tablespoon.
  2. Add diced onion and cook for 3-4 minutes until softened. Add minced garlic, dried oregano, and red pepper flakes (if using). Cook for 1 minute, stirring constantly, until fragrant.
  3. Pour in crushed tomatoes and chicken broth. Add bay leaf, salt, and pepper. Stir, scraping up browned bits from the bottom. Bring to a boil, then reduce heat to low and simmer uncovered for 20 minutes.
  4. While soup simmers, bring a large pot of salted water to a boil. Cook broken lasagna noodles according to package directions until al dente (about 8-10 minutes). Drain and toss with a drizzle of olive oil to prevent sticking. Set aside.
  5. In a small bowl, mix ricotta cheese and grated Parmesan. Season with a pinch of salt and pepper. Set aside.
  6. Remove bay leaf from soup and discard. Stir in cooked lasagna noodles. Ladle soup into bowls. Top each serving with a dollop of ricotta mixture, a sprinkle of shredded mozzarella, and fresh basil. Serve immediately with extra Parmesan on the side.

Notes

Cook noodles separately to prevent a starchy broth. For leftovers, undercook noodles slightly and store separately. The soup tastes even better the next day. For a melty cheese topping, transfer soup to an oven-safe dish, top with mozzarella, and broil for 2-3 minutes.
