  • 810 lasagna noodles, broken into 12 inch pieces
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 cup whole-milk ricotta cheese
  • ¼ cup grated Parmesan cheese (for ricotta dollops)
  • 2 tablespoons fresh parsley, chopped (plus more for garnish)
  • 1 clove garlic, minced (optional, for ricotta dollops)
  • Salt and pepper, to taste (for ricotta dollops)

Instructions

  1. Brown the meat: Heat olive oil in a large pot over medium-high heat. Add ground beef and cook, breaking it up, until browned, about 6-8 minutes. Spoon out excess fat, leaving about 1 tablespoon.
  2. Soften the aromatics: Reduce heat to medium. Add diced onion and cook until softened, about 4-5 minutes. Add minced garlic, dried oregano, dried basil, and red pepper flakes (if using). Cook for 1 minute until fragrant.
  3. Build the broth: Pour in chicken broth, crushed tomatoes, and undrained diced tomatoes. Stir, scraping up browned bits from the bottom. Season with salt and pepper (start with 1 teaspoon salt and ½ teaspoon pepper).
  4. Cook the noodles: Bring soup to a boil over high heat. Add broken lasagna noodles, stirring to submerge. Reduce heat to a simmer and cook, uncovered, for 12-15 minutes until noodles are tender, stirring occasionally.
  5. Make the ricotta dollops: In a small bowl, combine whole-milk ricotta, grated Parmesan, chopped parsley, and minced garlic (if using). Season with salt and pepper. Stir until well combined. Set aside.
  6. Finish the soup: Remove pot from heat. Stir in shredded mozzarella and ½ cup grated Parmesan until melted and creamy. Taste and adjust seasoning.
  7. Serve and top: Ladle hot soup into bowls. Top each with a generous dollop of ricotta mixture. Sprinkle with extra chopped parsley. Serve immediately.

Notes

The soup will thicken as it sits. If making ahead or reheating, add a splash of broth or water to thin. For best results, undercook noodles slightly as they continue to cook in hot broth. Use whole-milk ricotta for best texture. Let ricotta come to room temperature before serving for easier dolloping.
