Ingredients

Scale
  • 2 cups (240g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 1/3 cup (80ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 cup (245g) pure pumpkin puree
  • 1 teaspoon vanilla extract
  • 8 oz (225g) cream cheese, softened
  • 1/3 cup (40g) powdered sugar
  • 1 teaspoon cinnamon (for crumble)
  • 2 tablespoons (28g) cold cubed butter (for crumble topping)
  • 1/2 cup all-purpose flour (for crumble topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. Make the crumb topping: In a small bowl, combine 1/4 cup brown sugar, 1 teaspoon cinnamon, 1/2 cup all-purpose flour, and 2 tablespoons cold cubed butter. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs. Set aside in the fridge to keep cold.
  3. Prepare the cream cheese swirl: In a medium bowl, beat together the softened cream cheese, powdered sugar, and 1/2 teaspoon vanilla extract until smooth and creamy. Set aside.
  4. Mix dry ingredients: In a large bowl, whisk together 2 cups flour, baking powder, baking soda, 1 tablespoon cinnamon, nutmeg, and salt.
  5. Mix wet ingredients: In another bowl, whisk the granulated sugar, oil, eggs, pumpkin puree, and remaining vanilla extract until combined.
  6. Combine wet and dry: Add the wet ingredients to the dry and gently fold using a spatula until just combined. Don’t overmix — a few lumps are okay.
  7. Assemble muffins: Spoon about 2 tablespoons of pumpkin batter into each muffin cup. Then add about 1 tablespoon of cream cheese mixture on top. Add another 2 tablespoons of pumpkin batter over the cream cheese. Use a skewer or knife to gently swirl the cream cheese through the batter.
  8. Add crumble topping: Sprinkle a generous amount of the chilled cinnamon crumble over each muffin.
  9. Bake: Place the muffins in the oven and bake for 22-25 minutes, or until a toothpick inserted near the center comes out clean (a little cream cheese may stick but no wet batter).
  10. Cool: Let muffins cool in the tin for 10 minutes, then transfer to a cooling rack to cool completely.

Notes

Do not overmix the batter to keep muffins tender. Soften cream cheese properly for best swirl effect. Keep butter cold for crumble topping to maintain crispness. Let muffins cool fully before storing to keep crumble crisp. Variations include gluten-free, vegan, adding nuts, or fruit.
