  • 3/4 cup (95g) all-purpose flour
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon pumpkin pie spice (or mix cinnamon, nutmeg, and cloves)
  • Mini chocolate sandwich cookies, halved (for graveyard tombstones)
  • White icing or melted white chocolate (for decorating)
  • Optional: candy eyes, edible glitter, or black licorice strings for spooky accents

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a 9×9-inch baking pan by lining it with parchment paper or spraying with non-stick spray.
  2. Melt chocolate chips and butter together in a microwave-safe bowl in 30-second bursts, stirring until smooth. Let cool slightly.
  3. In a large bowl, whisk together sugar and eggs until light and slightly fluffy.
  4. Stir in pumpkin puree and vanilla extract until combined.
  5. Slowly add the melted chocolate and butter mixture to the wet ingredients, stirring gently.
  6. In a separate bowl, sift together flour, cocoa powder, baking powder, salt, and pumpkin pie spice.
  7. Gradually fold the dry ingredients into the wet mixture until just combined; do not overmix.
  8. Pour batter into the prepared baking pan and smooth the top with a spatula. For mini bites, spoon batter into a mini muffin tin lined with papers, filling about 3/4 full.
  9. Bake 25-30 minutes for the pan or 15-18 minutes for mini bites, until a toothpick inserted comes out mostly clean with a few moist crumbs.
  10. Cool brownies completely before cutting into bite-sized squares or removing mini bites from the tin.
  11. Decorate with halved mini cookies as tombstones and pipe ‘RIP’ or faces with white icing. Add candy eyes or licorice strings for extra spooky fun.
