  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon allspice

Instructions

  1. Cream the butter and sugar: In a large mixing bowl, beat the softened butter and granulated sugar together on medium speed until light and fluffy, about 2-3 minutes. Scrape down the sides of the bowl halfway through.
  2. Add the wet ingredients: Add the pumpkin puree, egg, and vanilla extract to the butter mixture. Beat on low speed until just combined. The mixture may look curdled; that’s normal.
  3. Whisk the dry ingredients: In a separate medium bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, cinnamon, ginger, nutmeg, cloves, and allspice.
  4. Combine wet and dry: Gradually add the dry ingredients to the wet ingredients, mixing on low speed in two or three batches. Mix until just combined. Do not over-mix. Finish folding by hand with a spatula if needed.
  5. Chill the dough (optional but helpful): Wrap the dough in plastic wrap and chill in the fridge for 30 minutes for easier rolling and better shape retention.
  6. Preheat and prep: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  7. Roll and cut: Lightly flour your work surface and rolling pin. Roll the dough out to about 1/4-inch thickness. Cut out shapes with Halloween cookie cutters. Re-roll scraps and repeat.
  8. Bake: Place cookies on prepared baking sheets, leaving about 1 inch of space between them. Bake for 8-10 minutes. Edges should be just set and bottoms lightly golden; centers will look soft.
  9. Cool: Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. Decorate (optional): Dust with powdered sugar, drizzle with glaze, or decorate with royal icing once completely cool.

Notes

For a softer cookie, bake for 8 minutes. For a slightly crispier edge, bake for 10 minutes. If dough sticks while rolling, chill for an additional 10 minutes. Use room temperature ingredients for best results. Store in an airtight container at room temperature for up to 5 days; add a slice of bread to keep cookies soft. Freeze baked cookies for up to 3 months or freeze raw dough shapes for up to 3 months (bake from frozen, adding 2-3 minutes).
