  • 1 3/4 cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup (113g) unsalted butter, melted and slightly cooled
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup (170g) semi-sweet or dark chocolate chips
  • Optional: 1/2 cup chopped walnuts or pecans
  • Optional: 1 tablespoon Greek yogurt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or line it with parchment paper.
  2. In a large bowl, mash the ripe bananas with a fork until mostly smooth but with a few lumps remaining.
  3. Add the melted and slightly cooled butter to the mashed bananas and stir until combined.
  4. Add the granulated sugar, eggs one at a time, beating lightly after each addition. Stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  6. Gradually fold the dry ingredients into the wet banana mixture, mixing gently to avoid overmixing.
  7. Fold in the chocolate chips, reserving a handful to sprinkle on top.
  8. Pour the batter into the prepared loaf pan and spread evenly. Sprinkle the reserved chocolate chips on top.
  9. Bake for 55-65 minutes, starting to check at 55 minutes with a toothpick inserted in the center. It should come out with a few moist crumbs but no wet batter. Tent with foil if the top browns too quickly.
  10. Cool the bread completely on a cooling rack before slicing.

Use very ripe bananas for best flavor and moisture. Avoid overmixing the batter to keep the bread tender. Check the bread starting at 55 minutes to avoid overbaking.
