  • ½ teaspoon fine sea salt (or to taste)
  • ¼ teaspoon freshly ground black pepper
  • ⅛ teaspoon cayenne pepper (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Separate the seeds from the pumpkin pulp. Scoop seeds and stringy insides into a large bowl, fill with cold water, and use your hands to separate seeds from pulp. Seeds will float to the top.
  3. Rinse the seeds in a colander under cold water, then spread them on a clean kitchen towel and pat dry thoroughly.
  4. In a medium bowl, combine melted butter, olive oil, garlic powder, salt, pepper, and cayenne (if using). Whisk until well blended.
  5. Add the dried seeds to the bowl and stir until every seed is evenly coated.

  7. Roast for 20 minutes, stirring halfway through (at the 10-minute mark).
