Instructions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until evenly combined.
  2. In another bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and gently fold together with a spatula. Do not overmix; a few lumps are fine. Let the batter rest for 5 minutes.
  4. Heat a non-stick skillet or griddle over medium heat. Test readiness by sprinkling a few drops of water on the surface; they should dance and evaporate quickly.
  5. Lightly grease the skillet with butter or oil. Using a ladle or 1/4 cup measuring cup, pour batter onto the skillet.
