A hearty, creamy slow cooker soup made with smoked sausage, Yukon Gold potatoes, and a velvety broth. This set-it-and-forget-it meal is perfect for busy weeknights and delivers rich flavor with minimal effort.

  • 1 lb (450g) smoked sausage or kielbasa, sliced into ½-inch rounds
  • 2 tbsp (30ml) olive oil (optional, for browning)
  • 1 large yellow onion, diced (about 1½ cups)
  • 3 cloves garlic, minced
  • 2 lbs (900g) Yukon Gold potatoes, diced into ½-inch cubes
  • 4 cups (960ml) low-sodium chicken broth
  • 1 tsp (5g) dried thyme
  • ½ tsp (2.5g) smoked paprika
  • ½ tsp (2.5g) black pepper
  • ½ cup (120ml) heavy cream or half-and-half
  • ¼ cup (15g) fresh parsley, chopped (for garnish)
  • ¼ cup (25g) grated Parmesan cheese (for garnish)
  • Crusty bread or crackers (for serving)

Instructions

  1. Prep your ingredients: Wash and dice potatoes into ½-inch cubes (leave skins on). Dice onion, mince garlic, slice sausage into ½-inch rounds. Chop parsley for garnish.
  2. Layer ingredients in the slow cooker: Place diced potatoes and onion in the bottom. Sprinkle garlic, thyme, smoked paprika, and black pepper over the top. Lay sliced sausage evenly over the vegetables.
  3. Add the broth: Pour chicken broth over everything. Do not stir. The broth should almost cover the ingredients but not completely submerge them.
  4. Cook low and slow: Cover and cook on LOW for 4-6 hours or on HIGH for 2-3 hours. LOW is recommended for best texture.
  5. Check for doneness: Potatoes should be fork-tender but still hold their shape. If too thin, leave lid off for the last 30 minutes to let moisture evaporate.
  6. Stir in the cream: Turn off the slow cooker. Remove lid and let soup sit for 2-3 minutes. Slowly pour in heavy cream while stirring gently until fully incorporated.
  7. Season and serve: Taste and add salt if needed. Ladle into bowls, garnish with parsley and Parmesan. Serve with crusty bread.

Notes

For best texture, cook on LOW. Add cream off heat to prevent curdling. Soup thickens overnight; add a splash of broth when reheating. For a dairy-free version, use full-fat canned coconut milk instead of heavy cream.
