  • 1 large orange, sliced into rounds
  • 1 apple, sliced into rounds
  • 34 cinnamon sticks
  • 1 tablespoon whole cloves
  • 34 star anise pods
  • 1 teaspoon whole allspice berries
  • 1 (2-inch) piece fresh ginger, sliced
  • 23 tablespoons maple syrup or brown sugar (optional)
  • Apple slices, cinnamon sticks, star anise (for garnish, optional)

Instructions

  1. Wash the orange and apple thoroughly. Slice both into thin rounds, about 1/4-inch thick. Leave the peel on.
  2. Scrub the fresh ginger and slice it into thin coins, about the thickness of a nickel. No need to peel.
  3. Pour the apple cider into the slow cooker. Add the orange slices, apple slices, ginger coins, cinnamon sticks, whole cloves, star anise pods, and allspice berries. If using maple syrup or brown sugar, add it now. Stir gently to combine.
  4. Cover the slow cooker with the lid. Set to LOW for 4-6 hours or HIGH for 2-3 hours. The cider is ready when steaming hot and deeply fragrant.
  5. After at least 2 hours on low, taste the cider and adjust sweetness or spice as needed. Add more maple syrup or an extra cinnamon stick if desired.
  6. Place a fine-mesh strainer over a large heatproof pitcher or bowl. Carefully ladle the cider through the strainer to remove fruit slices and whole spices. Press gently on solids with the back of a spoon to extract remaining liquid. Discard solids.
  7. Ladle the warm cider into mugs. Garnish each mug with a fresh apple slice and a cinnamon stick, if desired. Serve immediately.

Notes

For a deeper flavor, toast the whole spices in a dry skillet for 1-2 minutes before adding. The cider tastes even better the next day. If using a stovetop, simmer gently for 1-2 hours. Avoid boiling to prevent cloudiness.
