This slow cooker turkey and wild rice soup is a warm, filling, and deeply flavorful meal that’s almost embarrassingly easy to make. Perfect for using up leftover turkey or just craving something cozy on a cold evening.

  • 1 cup wild rice blend
  • 1 medium yellow onion, diced
  • 2 large carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken or turkey broth
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary, crushed
  • 2 bay leaves
  • 1 teaspoon salt (plus more to taste)
  • ½ teaspoon black pepper (plus more to taste)
  • 1 cup heavy cream or half-and-half
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prep the vegetables: Dice the onion, carrots, and celery into roughly equal-sized pieces (about ½-inch). Mince the garlic.
  2. Add everything to the slow cooker (except the cream and parsley): Place the shredded turkey, diced vegetables, minced garlic, wild rice blend, dried thyme, crushed rosemary, bay leaves, salt, and pepper into the slow cooker. Pour the broth over everything and give it a good stir to combine.
  3. Cook on low: Cover and cook on low for 6-7 hours, or on high for 3-4 hours. The soup is ready when the wild rice is tender and has started to split open slightly, and the vegetables are soft.
  4. Check the rice: About 30 minutes before serving, taste the rice to make sure it’s cooked through. If it’s still a little firm, let it cook another 30 minutes.
  5. Temper the cream: In a small bowl, whisk together the heavy cream with about ½ cup of hot broth from the slow cooker.
  6. Add the cream: Pour the tempered cream mixture into the slow cooker and stir gently. Let it cook uncovered for another 10-15 minutes so the soup thickens slightly and the flavors meld.
  7. Adjust seasoning: Remove the bay leaves. Taste the soup and add more salt, pepper, or herbs if needed.
  8. Serve: Ladle the soup into bowls and garnish with fresh chopped parsley. Serve hot with crusty bread or a simple side salad.

Notes

If you want a thicker soup, mash some of the cooked vegetables against the side of the slow cooker with a spoon before adding the cream. The soup thickens as it sits; add a splash of broth when reheating. For a dairy-free version, use full-fat coconut milk. For a lighter version, use half-and-half or whole milk.
