Instructions

  1. Pat the pork chops dry with paper towels, then season generously with salt and pepper on both sides.
  2. Heat the vegetable oil in a large heavy-bottom skillet or cast iron pan over medium-high heat until shimmering but not smoking.
  3. Add the pork chops and sear for about 4-5 minutes per side until nicely browned. Do not move them around to allow crust development.
  4. Remove chops from skillet and set aside on a plate; tent loosely with foil to keep warm.
  5. Reduce heat to medium, add butter to the same skillet (add a splash of oil if butter starts to brown too fast).
  6. Add the sliced onions and a pinch of salt, stirring to coat. Cook slowly, stirring occasionally, until onions are soft, golden, and deeply caramelized (about 12-15 minutes).
  7. Add minced garlic in the last 2 minutes to soften without burning.
  8. Sprinkle flour over the onions and stir well to combine; cook for about 1-2 minutes to remove raw flour taste.
  9. Slowly pour in chicken broth while stirring continuously to avoid lumps.
  10. Add thyme if using, bring the mixture to a gentle simmer. The sauce will thicken as it heats.
  11. Stir in heavy cream and season with salt and pepper to taste.
  12. Return the pork chops to the skillet, nestling them into the gravy and spooning some onions on top.
  13. Cover with a lid or foil, reduce heat to low, and let simmer gently for about 8-10 minutes, or until pork chops reach an internal temperature of 145°F (63°C).
  14. Plate the pork chops and spoon the creamy onion gravy generously over each one. Serve with mashed potatoes or roasted vegetables.
