Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish with butter or nonstick spray.
  2. In a large bowl, combine strawberries, blueberries, raspberries, 3/4 cup sugar, cornstarch, lemon juice, and vanilla extract. Toss gently to coat and let sit for 10 minutes.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Cut cold, cubed butter into the flour mixture using a pastry cutter or fork until the mixture resembles coarse crumbs with pea-sized butter bits.
  5. Pour cold buttermilk into the flour mixture and stir gently with a wooden spoon until just combined. Add more buttermilk if dough is too dry. Do not overmix.
  6. Pour the berry filling evenly into the prepared baking dish.
  7. Drop spoonfuls of biscuit dough over the berries, leaving some gaps for spreading.
  8. Sprinkle 1 tablespoon sugar over the biscuit topping.
  9. Bake for 35-40 minutes until biscuits are puffed and golden brown and the berry filling is bubbly.
